Beta vulgaris — Canary Yellow Swiss Chard brings vivid, sunlit color to the kitchen garden — long, bright yellow veins and midribs set against dark green leaves that grow up to 2 feet tall. High germination rate, prolific leaf production, and outstanding flavor whether steamed or used raw in salads. One of the most reliable and visually appealing yellow-stemmed chard varieties available. 55 days to maturity.
Use baby leaves raw in salads and grain bowls — the yellow veins add color contrast. Sauté mature leaves with garlic and olive oil. Steam and finish with lemon and olive oil. Add to frittatas, pasta, and soups. The yellow stems are excellent pickled in white wine vinegar.
Direct sow outdoors from early spring through August. Sow ½ inch deep in fertile, moist, well-prepared soil in full sun or partial shade. Thin to 3 inches for baby leaves, 6–9 inches for full-size plants. Water consistently. Harvest outer leaves regularly to promote continuous new growth.
