Growing Notes

Sow directly outdoors in early spring as soon as soil can be worked — parsnips need a long season and do not transplant well. Sow seeds ½ inch deep, 2–3 seeds per inch, in rows 18 inches apart. Thin to 3–4 inches apart. Parsnips prefer deep, loose, rock-free soil — prepare beds well for straight root development. Keep soil consistently moist until germination (can take 2–3 weeks). Flavor improves after frost — harvest in fall or leave in ground through winter for sweetest roots.
