Apium graveolens — Introduced in 1886, Golden Self-Blanching is one of the most practical and productive heirloom celery varieties ever developed. The defining advantage: it blanches itself — no mounding, no tying, no wrapping required. Thick, crisp, juicy, deeply ribbed stalks with no strings and no bitter flavor. Stocky, disease-resistant plants reach 18–23 inches with ample water. Celery hearts are thick and crunchy. A high-yielding, reliable variety that delivers genuine celery flavor without the labor of traditional blanching methods.
Eat raw with nut butters or dips. Slice into salads and grain bowls. Add to soups, stews, and stocks. Braise whole stalks in broth with herbs. Juice with apple and ginger. The thick, stringless stalks are excellent for stuffing with cheese or nut butter.
