Stinging Nettle, Culinary & Medicinal Herbs,

Stinging Nettle grows throughout North America, especially in moist, forested soil. Stinging Nettle is a herbaceous perennial, often grown from herb seeds, and is used as a medicinal herb. It is used in the kitchen as well. They can be added to soups, and smoothies, and dried for tea. Once the nettles are cooked, juiced, pureed, or dried, they no longer sting. Nettle is exceptionally high in protein, iron, and other minerals and vitamins. For the best flavor and nutrition, harvest only the top 4 - 5 inches of the Stinging Nettle plant. Once the plants begin to flower, this signals the end of the harvest season. At this stage, the leaves begin to develop gritty particles called cystoliths, which irritate the kidneys. The ideal vegetable substitute in the wild for survival. It is the most nutritious green veggie you can eat! Medicinally it is even more fascinating. Chill the seeds before sowing to improve germination. It takes 10–14 days to come up and grows 3–6 feet tall. 75 days.
