Lower Salmon River squash is a rare Western heirloom from the Lower Salmon River region of Idaho — a heritage Pacific Northwest variety that has been grown in this region, possibly for generations. Drought-tolerant and remarkably long-keeping (up to a year, thanks to its hard skin that prevents rot and mouse damage), Lower Salmon River is delicious, easy, and early. Fruits are generally 3–10 pounds, with occasional 15-pound jumbos, in peach to orange tones with some variation in shape and color — some with turbans, some darker. The flavor is sweet and rich; the texture solid and dry enough to be comforting, yet moist and smooth enough for a pie. 80–90 days.
Direct sow outdoors after last frost when soil has warmed to at least 65°F, or start indoors 3–4 weeks before last frost. Sow seeds 1 inch deep in fertile, well-draining soil. Space plants 36–48 inches apart in full sun. Drought-tolerant once established, but consistent moisture improves yields. Harvest at 80–90 days when rind is hard. Cure at room temperature for 10–14 days before storage for best flavor and maximum shelf life.
