In the Kitchen

Roast whole at 375°F until tender; scoop flesh for individual pies and soups. Halve and roast cut-side down with butter and brown sugar. Toast the semi-hulless seeds with salt and olive oil — the thin hull means you can eat them whole. Use as individual serving bowls for soups and risotto.

Growing Notes

Plant seeds outdoors after all frost risk has passed and soil temperature reaches 65°F. Plant 3–5 seeds 1 inch deep per mound; thin to 2 strongest seedlings. Shorter vines than standard pumpkins — suitable for smaller gardens. Water deeply but infrequently. Harvest when skin is fully orange; cut with a 2–3 inch stem attached.
