Heshiko (Allium fistulosum) is a Japanese bunching onion producing tender leaves with white, spicy, delicious stalks growing 12–14 inches tall. A cool-season annual that will overwinter, Heshiko can be harvested at any stage from microgreens to full maturity. Longer white stems can be achieved by mounding earth up over the stems to blanch them. Use in Japanese soups, salads, and stir-fries — a versatile and reliable scallion for any kitchen. 60–80 days.
Direct sow outdoors in early spring or late summer for overwintering. Sow seeds ¼ inch deep, 1 inch apart, in rows 12 inches apart. Thin to 2–3 inches. Full sun. Keep soil consistently moist. For longer white stems, mound soil up around the base as plants grow. Harvest at any stage. 60–80 days to full maturity.
