Copenhagen Market is a classic Danish heirloom cabbage introduced by H. Hartmann & Company in 1909 — and it’s still one of the best. Early-maturing and heavy-yielding, it produces solid, tightly wrapped heads up to 8 inches across, weighing 3 to 4 pounds, with excellent keeping quality and outstanding flavor. Short-stemmed plants hold well in the field with great adaptability and strong resistance to early splitting.
Whether you’re making slow-cooked cabbage, crisp coleslaw, or a crock of homemade sauerkraut, Copenhagen Market delivers the dense, flavorful heads that make it all worthwhile.
Start indoors 4–6 weeks before last frost for spring crops, or direct sow in midsummer for fall harvest. Transplant outdoors when seedlings are 4–6 inches tall, spacing plants 18–24 inches apart in rows 24–36 inches apart. Water consistently and deeply. Harvest when heads are firm and solid to the touch.
