White Wonder is a very old, top-quality cucumber with a history stretching back to the late 1800s — and it is still grown today for its beautiful, white-ripening fruits that are as unusual as they are delicious. Harvest at 5–6 inches when the skin is a clean, bright white for the best slicing and pickling quality; let them grow to 7 inches for a larger fruit. Light-colored and “white” cucumbers were once quite popular in North America as a slicing and pickling variety, and White Wonder is the finest example of the type. Plants sown in May will bear fruit from July to September.
Direct sow outdoors after last frost when soil has warmed to at least 60°F, or start indoors 3–4 weeks before last frost. Sow seeds 1 inch deep in fertile, well-draining soil. Space plants 12–18 inches apart in full sun. Trellis or stake vines. Water consistently. Harvest at 5–6 inches for best slicing and pickling quality.
