Violet Queen is the cauliflower that stops people at the farmers market. This highly productive heirloom variety produces beautiful, rich purple heads that contrast dramatically with dark green leaves — as ornamental as it is delicious. The flavor is sweet and mild, making it a fantastic addition to vegetable trays, salads, and roasted dishes. The purple color comes from anthocyanins — the same powerful antioxidants found in blueberries — and is best preserved when eaten raw or lightly steamed. Note: the color fades when fully cooked, but the flavor remains excellent.
