Violet Queen is the cauliflower that stops people at the farmers market. This highly productive heirloom variety produces beautiful, rich purple heads that contrast dramatically with dark green leaves — as ornamental as it is delicious. The purple color comes from anthocyanins — the same powerful antioxidants found in blueberries — and is best preserved when eaten raw or lightly steamed. Note: the color fades when fully cooked, but the flavor remains excellent.

Growing Notes

Start indoors 4–6 weeks before last frost for a spring crop, or in midsummer for a fall harvest. Transplant outdoors when seedlings are 4–6 inches tall, spacing plants 18–24 inches apart in full sun. Water consistently and deeply. Fertilize with nitrogen-rich amendments for best head development. Harvest when heads are firm and fully colored — before they begin to separate.
