Celery requires a long growing season — start indoors 10–12 weeks before last frost. Surface sow seeds (needs light to germinate) in fertile, consistently moist soil. Transplant outdoors after frost danger has passed, spacing plants 6–8 inches apart in full sun to part shade. Water consistently and deeply — celery is a heavy feeder and drinker. Blanch stalks by mounding soil or wrapping with cardboard 2–3 weeks before harvest for milder flavor.
