Sugar beets are the path less traveled in the world of beets β€” and one of the most fascinating crops you can grow. Similar to the familiar red-rooted garden beet but much larger, Sugar Beet produces shiny white roots that reach 2–4 pounds at maturity and contain an extraordinary 13–22% sucrose β€” making them the world’s second-biggest source of sugar after sugar cane. Excellent roasted or steamed, the roots develop a rich, sweet flavor that is unlike any other beet. The greens are equally nutritious and can be eaten, lightly grazed, or fed to animals. Growing Notes

Sow seeds directly outdoors in early spring (4–6 weeks before last frost) or late summer for a fall crop. Sow Β½ inch deep, 2–3 inches apart, in rows 12–18 inches apart. Thin to 6 inches apart. Keep soil consistently moist after planting β€” germination takes 2–3 weeks. Beets prefer cool weather (55–80Β°F) and do not like heat. Tops grow 1–2 feet tall. Harvest roots at 2–4 pounds for best sugar content.
