Solar Yellow (Daucus carota) is a Danvers-type carrot with a history stretching back to the Middle East in the 900s β one of the oldest carrot colors in cultivation. Lemon-yellow roots grow 6β7 inches long with sweet, bright yellow flesh that is crunchy, full of juice, and distinctively flavored. The xanthophylls that give Solar Yellow its color are associated with good eye health. A real stand-out at farmersβ markets and in the salad bowl.
