Ramps (Allium tricoccum) — also known as Wild Leeks — are one of the most prized and eagerly anticipated wild foods in North America. Every spring, foragers and chefs seek out these smooth, elliptical-leaved plants in eastern woodlands, drawn by their unmistakable onion-garlic scent and intensely flavorful bulbs and leaves. Every part is edible: leaves and flowers can be eaten raw in salads or cooked in soups, sauces, and stews; bulbs are eaten raw or cooked; and stems are traditionally salted and preserved. Ramps are slow to establish — germination typically takes 6–18 months and requires cold stratification. Fall planting is strongly recommended. The reward is a long-lived, spreading woodland perennial that returns and expands year after year.
Cold stratification required. Ramp seeds need 2+ months of cold to break dormancy. Fall planting is strongly recommended — sow seeds on the surface of moist, sandy, well-draining soil in a pot, cover lightly, and place outside or in the refrigerator for at least 60 days. Keep soil moist but not waterlogged. After cold period, move to a warm location. Germination typically takes 6–18 months — be patient. Ramps prefer moist, slightly acidic woodland soil in part to full shade.
