The magic of Padrón: harvest at 1–1½” and most will be mild — with about one in twenty delivering a surprising kick. Let them grow to 2–3” and every single one turns hot. A great frying pepper, pickling pepper, and conversation piece all in one.
Start seeds indoors 8–10 weeks before last frost. Transplant to full sun in fertile, well-draining soil, spacing 18 inches apart. Keep evenly watered. Harvest at 1–1½” for mostly mild pods, or allow to reach 2–3” for full heat.
