NuMex Sandia, Hot Pepper Seeds — New Mexico’s Flavorful Medium-Heat Chili, Developed at NMSU in 1956

Developed at New Mexico State University in 1956 by Dr. Ray Harper, NuMex Sandia brings the rich flavor of an Anaheim pepper with a satisfying kick of extra heat. A cross between Anaheim and NuMex 9, this versatile chili registers 5,000–7,000 SHU — perfect for roasting, stuffing, salsas, and green chile dishes.

Why Grow NuMex Sandia?

  • Rich Anaheim flavor with more heat (5,000–7,000 SHU) — the best of both worlds
  • Versatile for roasting, stuffing, and salsas — a true kitchen workhorse
  • Historic New Mexico heritage variety — developed at NMSU in 1956
  • Open-pollinated — save seed year after year

Growing Notes

Start seeds indoors 8–10 weeks before last frost. Transplant to full sun in fertile, well-draining soil, spacing 18–24 inches apart. Keep evenly watered throughout the season. Harvest green or allow to ripen red for full flavor.
