Unlike most beets that turn tough and woody as they enlarge, Lutz stays sweet, tender, and deeply flavorful at any size β whether harvested young and small or left to grow to an enormous size late in the season. Direct sow outdoors 4β6 weeks before last frost or in late summer for a fall/winter harvest. Sow seeds Β½ inch deep, 2β3 inches apart, in rows 12β18 inches apart. Thin seedlings to 4β6 inches for large root development. Water consistently. Harvest roots at any size β Lutz is best when allowed to size up through summer and fall for maximum sweetness and storage quality.
