Shiso, Jeok Ssam (Perilla frutescens), a warm season is annual. This perilla has smaller leaves and a more robust, aromatic flavor than the Japanese perilla. The top side of the leaf is deep green, and the underside is a deep red-purple. Often also grown as an ornamental accent in the garden and traditionally cooked with seafood. Prepare fertile, well-drained soil. Sow by broadcasting seeds in late spring/summer after the last frost, in a warm, sunny location. Seeds need light to germinate, so cover them with a thin soil layer. Keep soil moist. Fertilize as needed. The plant is heat tolerant and prefers full sun to light shade. Use in shrimp and fish dishes, banh tom, thit heo nau ya ba ba, and pickling.
