Stunning burgundy leaves and seed heads make a beautiful backdrop for any garden. The entire plant is edible, including the tasty black seeds. Hopi people make a scarlet food dye from the flower bracts to color their ceremonial piki bread and as an attractive dried flower. The mature plant grows 5 ft high. This leafy “spinach” amaranth is popular in Asia and is eaten raw, stir-fried, or steamed. This is one the more tender and sweetest amaranth for edible greens, making for a vibrant and delicious salad. The young leaves are a perfect spinach substitute. This is the go-to “green” for midsummer when all others have bolted. Also delicious as microgreens.
