Hopi Blue is far more than a traditional food — it is a living thread of Hopi culture from Northern Arizona, where this ancient corn has been grown for centuries. Warriors believed that eating it before a long journey would bring safety; women used it in the naming ceremonies of their babies. Tall, vigorous plants produce ears up to 10 inches long that can be eaten as sweet corn when young, or — more traditionally — ground into blue cornmeal for tortillas, corn chips, and blue cornbread. Hopi Blue contains 20% more protein than other corn varieties, making it as nutritious as it is historically significant.
Direct sow outdoors after last frost when soil has warmed to at least 60°F. Plant in blocks of at least 4×4 for good wind pollination — single rows will result in poorly filled ears. Sow seeds 1 inch deep, 8–12 inches apart, in rows 30–36 inches apart. Water consistently. Harvest young for sweet corn, or allow to fully dry on the stalk for cornmeal.
