Cylindra (Beta vulgaris) is the beet that changes how you think about beets. Instead of the familiar round globe, Cylindra produces long, cylindrical dark red roots — 5 to 8 inches long and 2 inches thick — that are sweet, tender, and ideal for slicing into uniform rounds. The cylindrical shape means more usable root per plant and more even slices for pickling, canning, and cooking. The leaves are a little sweeter than other beets and make lovely salad greens. Produces more in the same space. Perfect for container gardening and raised beds. 59–70 days.
