Chioggia — The Italian Candy Cane Beet With Alternating White & Pink Rings Inside

Chioggia is one of the most visually stunning vegetables in the garden — and one of the most delicious. Also known as the Candy Cane Beet or the Bullseye Beet, this heirloom originates from the coastal town of Chioggia in Northern Italy near Venice. The roots are cherry red on the outside, but slice one open and you’ll find beautiful alternating rings of white and deep pink — a natural bullseye pattern that makes every slice a showstopper. The flavor is a little sweeter than purple beets, with a mild, clean taste that is excellent raw in salads where the colors shine brightest. Note: the striking interior color fades when cooked — enjoy raw or lightly pickled for maximum visual impact. 55 days.

Growing Notes

Direct sow outdoors in early spring (4–6 weeks before last frost) or late summer for a fall crop. Sow seeds ½ inch deep, 3–4 seeds per inch, in rows 12–18 inches apart. Thin to 3–4 inches apart. Keep soil consistently moist — cool temperatures produce the best color and flavor. Succession sow every 2 weeks for a continuous harvest. Harvest at 2–3 inches for peak sweetness and color contrast.
