Brunswick (Brassica oleracea) is a rare German heirloom dating back to the 18th century — first made available to the public in 1924 and prized ever since for its cold hardiness and exceptional storage quality. Large, 6–9 lb drum-shaped heads are dense, firm, and wide-flattened with excellent flavor. Very cold hardy and stores extremely well. The preferred variety for sauerkraut — just as cabbages were pickled and preserved in colonial America to provide food through the winter. A late-season variety that rewards patience with outstanding heads. 200+ seeds per packet.
Start indoors 6–8 weeks before last frost, or direct sow in late spring for a fall/winter crop. Transplant outdoors when seedlings are 4–6 inches tall, spacing plants 18–24 inches apart in full sun. Water consistently and deeply. Fertilize with nitrogen-rich amendments. A late-season variety — best with early-summer sowings for fall harvest. Harvest when heads are firm and solid.
