Atomic Red (Daucus carota) is the carrot that earns its place on the nutrition list — 8-inch roots rich in vitamins and minerals, and especially high in lycopene, the same powerful antioxidant found in tomatoes. Crisp roots are at their best when cooked, which makes the lycopene more bioavailable. When peeled and cooked, Atomic Red deepens to a stunning blood-red color that makes it as dramatic on the plate as it is in the garden. Very flavorful and particularly suited to stir-frying.
