Purple di Sicilia Violetta is a stunning Sicilian heirloom cauliflower with deep purple heads that are as beautiful in the garden as they are on the plate. Tastier, more nutritious, and easier to grow than white cauliflower, it is delicious raw or cooked, freezes well, and makes a stunning addition to vegetable trays and salads. The deep purple color turns traditional green when cooked β a dramatic transformation that surprises and delights. Incredibly cold-hardy, and after cutting the main head, plants continue to produce many side shoots for an extended harvest. Start indoors 4β6 weeks before last frost or direct sow in late summer for fall harvest. Transplant outdoors after last frost, spacing plants at least 20 inches apart in full sun in fertile, well-draining soil. Keep soil consistently moist and fertilize regularly. Harvest main head when firm and fully colored. Leave plants in ground β side shoots will continue to develop after main head is cut.
