Tendergreen Mustard or (Komatsuna)​ is milder than regular mustard greens. Tendergreen has smooth leaves and is a fine spinach substitute, especially in the fall. Its tender leaves and flowering stems are used for raw or cooked and have a flavor between mustard greens and cabbage. Seeds germinate and proliferate in the late summer heat and mature to tender sweetness in cool weather. Thinnings are delicious as fresh snacks or salads. Heat and drought-resistant. 45 days (mature) or 20 days (baby greens).
