Brassica oleracea — Igloo is an excellent heirloom cauliflower variety bred for cooler climates and flexible garden management. Snowball-shaped white heads protected by upright, dark green leaves that naturally shield the curd from frost. One of Igloo’s most useful features: it can be grown at closer spacing for smaller, faster heads or given more space for larger, later heads — giving the gardener genuine control over harvest timing and head size. 65–75 days.

In the Kitchen

Roast florets with olive oil, garlic, and lemon until caramelized. Steam whole and serve with brown butter and capers. Rice for a low-carb grain substitute. Slice into thick steaks and sear in cast iron. Serve raw on crudité platters. Add to soups and curries.

  • Season: Cool-season crop; best in spring and fall
  • Start indoors: 4–6 weeks before transplant date; harden off before moving outside
  • Spacing: Closer spacing (30 cm / 12 in) for smaller, faster heads; wider spacing (45–60 cm / 18–24 in) for larger heads
  • Soil: Rich, fertile, consistently moist, well-draining; pH 6.0–7.0; heavy feeder
  • Harvest: Cut when heads are firm and tight, before curds begin to separate or yellow
