Snowball-shaped white heads protected by upright, dark green leaves that naturally shield the curd from frost. In the Kitchen

Roast florets with olive oil, garlic, and lemon until caramelized. Steam whole and serve with brown butter and capers. Rice for a low-carb grain substitute. Slice into thick steaks and sear in cast iron. Serve raw on crudité platters. Add to soups and curries.

• Start indoors: 4–6 weeks before transplant date; harden off before moving outside
