Brassica oleracea var. italica — First documented in Italy in the 16th century as broccolo romanesco, Romanesco is one of the most visually extraordinary vegetables in cultivation. Its chartreuse-green heads are composed of perfectly logarithmic spiral florets — a natural fractal that looks like it was designed by a mathematician. Plants reach 3 feet tall and 2 feet wide. Nutty, mild flavor — more delicate than standard broccoli or cauliflower. Excellent raw, lightly steamed, or roasted. Freezes well. Rich in vitamin C, vitamin K, dietary fiber, and carotenoids. 70–90 days.
Romanesco is a “true” broccoli (unlike Calabrese) and in northern climates requires vernalization — a period of cold exposure — to produce heads. Start seeds indoors under lights until true leaves appear, then harden off in a cold frame or low tunnel for 3–4 weeks at ~40°F. This mimics winter and triggers head formation. In warmer climates, fall planting naturally provides the required cold exposure.
Serve raw florets on cheese boards and crudité platters — the fractal structure is a conversation piece. Roast with olive oil, garlic, and lemon until caramelized. Steam lightly and finish with brown butter and capers. Add to pasta with anchovy, garlic, and chili. Pickle florets in white wine vinegar for a stunning garnish.
