Growing Notes

Direct sow outdoors when soil has warmed to 45°F. Sow seeds ½ inch deep, 3–4 seeds per inch, in rows 12–18 inches apart. Thin to 2 inches apart. Beets prefer light or loamy soil with pH above 6.0 — cool temperatures produce the best flesh color. Succession sow every 2 weeks for a continuous harvest. Avoid temperature fluctuations, which can cause white rings (zoning) in roots. Harvest at 2 inches for peak sweetness.
