Watanabe Early Burdock, known as Gobo in Japan, is highly prized as a nutritious delicacy and a traditional Asian vegetable with centuries of culinary and medicinal use. This early variety matures faster than the standard Takinogawa burdock and produces the same rich, distinctive flavor with a slightly shorter, very tender root. Plants grow up to 3 feet tall. Burdock root (Arctium lappa) is an incredibly nutritive food and medicine β€” often cooked in soups, stir-fried, or pickled β€” and has been used by Native American tribes including the Malecite, Micmac, Ojibwa, Menominee, and Iroquois for skin health, food, and winter storage. The burdock root’s ability to penetrate heavy clay subsoil can also help improve garden drainage. 75–85 days.

Growing Notes

Critical: Burdock seeds need light to germinate β€” barely cover seeds with a thin layer of soil, do not bury deeply. Direct sow outdoors in early spring in deep, loose, well-draining soil β€” burdock roots need depth to develop properly. Keep soil consistently moist. Plants grow up to 3 feet tall.
