Spinacia oleracea — Introduced at the turn of the 20th century, Bloomsdale Long Standing is the benchmark heirloom spinach — heavy, glossy, dark green leaves that are deeply savoyed and crinkled, held erect so they stay cleaner than flat-leaf types. Slow to bolt, high-yielding, and equally excellent as a full-size crop or microgreen. 54 days.
Direct sow in early spring as soon as soil can be worked, or in fall 4–6 weeks before first frost. Sow ½ inch deep, 2 inches apart; thin to 4–6 inches. Prefers cool temperatures (45–75°F). Full sun to partial shade. Keep soil consistently moist. For microgreens, sow densely in trays and harvest at 1–2 inches.
