Yellow Mustard (Sinapis alba) is the variety of mustard most familiar to American palates — mild, versatile, and easy to grow. Plant a scant dozen plants and they should yield enough to make at least a few batches of prepared mustard. Toast the seeds in a frypan until they pop and grind into spicy mixtures. Just as easy to grow as leafy mustards. Harvest seeds as soon as pods begin to turn tan — pods open once the seeds are dry. 70–85 days. 500+ seeds per packet.
Direct sow outdoors in early spring or fall. Sow seeds ¼ inch deep in full sun. Space plants 6 inches apart in rows 12 inches apart. Keep soil consistently moist. Harvest seeds as soon as pods begin to turn tan — pods will open once seeds are dry. Thresh and store in an airtight container.
