Few things in gardening are more satisfying than cooking squash in the middle of winter — harvested and stored by your own hands. This collection brings together three of the finest heirloom winter squashes available, each with exceptional flavor, excellent long-term storage, and a distinct character in the kitchen. Grow all three and you'll be eating well from harvest through spring.

  • Spaghetti Squash — oblong yellow fruits whose cooked flesh separates into tender, spaghetti-like strands with a mild, slightly sweet flavor; a nutritious low-carb pasta alternative that stores beautifully; 80 days
  • Jumbo Pink Banana Squash — enormous cylindrical fruits with distinctive pink-orange skin and thick, firm, sweet yellow-orange flesh ideal for pies, soups, and baking; can exceed 50 pounds — harvest at under 36 inches for best flavor; an exceptional long-term keeper; 100 days

In the Kitchen

Roast Waltham Butternut with brown butter and sage for a classic fall side. Bake Jumbo Pink Banana into pies, soups, and breads — its dense, sweet flesh is exceptional for cooking. Halve and roast Spaghetti Squash, then scrape the strands and top with marinara or pesto for a satisfying low-carb dinner. All three store for months — cure them well and your winter pantry is set.

Growing Notes

All three varieties are warm-season crops sensitive to frost. Direct sow outdoors after last frost when soil has warmed to at least 65°F, or start indoors 3–4 weeks before last frost. Space plants 36–48 inches apart in full sun with room to vine. Harvest when vines die back or just before frost. Cure in a well-ventilated area at 80–85°F for 10–14 days, then store at 50–55°F for best long-term keeping.
