White Russian Kale β€” Hardier, More Productive & Just as Sweet as Red Russian

White Russian Kale is the cold-hardy upgrade on the beloved Red Russian β€” bred by renowned plant breeder Frank Morton to be everything Red Russian is, and more. A flat-leaf Siberian type with silvery-green leaves and distinctive white veining, White Russian is a few inches taller, a third more productive, and significantly hardier in cold weather than its red-stemmed cousin. The leaves are larger and more serrated, with the same sweet, tender flavor that makes Russian kales the favorite of chefs and home gardeners alike. Baby leaves are ready in just 21 days; full-size leaves at 50 days.

One of the most nutritious vegetables on earth β€” a true superfood rich in vitamins K, A, and C, plus powerful antioxidant carotenoids and flavonoids.

Why Grow White Russian Kale?

  • Hardier than Red Russian β€” superior cold tolerance, one of the most frost-hardy kales
  • 1/3 more productive β€” larger, more serrated leaves with heavier yields
  • Baby leaves in 21 days β€” one of the fastest kales to first harvest
  • Sweet, tender flavor β€” excellent raw in salads or lightly cooked
  • Superfood nutrition β€” 684% RDA vitamin K, 206% vitamin A, 134% vitamin C per cup
  • Open-pollinated heirloom β€” save seed year after year

Growing Notes

Start indoors 3–4 weeks before transplanting, or direct sow outdoors in early spring or late summer. Sow 3–4 seeds ΒΌ inch deep per cell, or 6 inches apart in well-draining, rich soil in full sun to part shade. Germination in 3–10 days. Thin to 1 plant per pot or every 8–12 inches as true leaves establish. Harvest outer leaves regularly for continuous production. Avoid extended summer heat β€” kale bolts and becomes bitter in high temperatures. Flavor improves after frost.
