Waltham Butternut (Cucurbita moschata) is the butternut squash by which all others are measured — a 1970 All-America Selections winner developed at the Waltham Field Station in Massachusetts. Tan-skinned, 4–5 lb fruits with a small seed cavity and deep orange, nutty-sweet flesh that is exceptional for soups, roasting, and pies. One of the best keepers in the garden. 85 days.
Direct sow outdoors after last frost in full sun, or start indoors 3–4 weeks before transplanting. Sow 1 inch deep, spacing plants 36–48 inches apart. Water consistently. Harvest when skin is hard and tan.
