The Ute Indian Winter Squash is a living piece of agricultural heritage — a rare variety cultivated by the Ute people of the American West and prized for its rich, sweet, dense flesh and remarkable ability to store through the winter months. These large, vigorous vines produce beautiful squash with deeply flavorful flesh that rewards patient gardeners who let them cure and sweeten after harvest.
If you're looking for a squash that connects your garden to history, feeds your family through the cold months, and delivers outstanding flavor in soups, roasts, and pies — Ute Indian is a variety worth growing.
Direct sow outdoors after last frost when soil has thoroughly warmed, or start indoors 3–4 weeks before transplanting. Plant in hills of 2–3 seeds, spacing hills 4–6 feet apart with rows 6–8 feet apart. Thin to the strongest plant per hill. Water deeply and consistently; squash are heavy feeders — amend soil with compost before planting. Allow fruits to fully mature on the vine before harvesting. Cure in a warm, dry location for 10–14 days to develop full sweetness and extend storage life.
