Growing Notes

Sow in spring or fall in a sunny location in deep, loose, fertile soil — roots need room to grow long. Improve germination by soaking seeds 24 hours in warm water; scarification also helps. Cover very lightly — burdock seeds need light to germinate. Keep seedbed moist. Thin weak seedlings; after germination, seedlings develop rapidly. If starting in trays, transplant to permanent location before taproot begins to form. Pinch off flowers as they appear to encourage root production. Mulch or plant shallow-rooted cover crops around plants to suppress weeds. For fall sowing, provide cloches or covers to help plants overwinter.

Harvest: Roots ready in 4–5 months from spring planting. Keep extra soil on harvested roots to prolong freshness.
