San Marzano is not just a tomato — it is a culinary standard. The paste tomato that Italian chefs have demanded for generations, San Marzano produces bright-red, slim, 3–4 inch fruits with a distinctive pointed end, heavy walls, and remarkably little juice or seeds. The result is a tomato that cooks down into a rich, thick sauce with a flavor that is stronger, sweeter, and less acidic than any Roma — the reason San Marzano has become the benchmark for serious sauce makers worldwide.
This determinate strain ripens in a concentrated set, making it ideal for gardeners who want to process a large batch at once. Excellent for sun drying, and holds well on the vine or in storage.
Start indoors 6–8 weeks before last frost. Sow seeds ¼ inch deep in fertile, well-draining soil. Transplant outdoors after all frost danger has passed, spacing plants 18–24 inches apart in full sun. Water consistently. Harvest when fruits are fully red and firm.
