Salad King is widely regarded as one of the best endive varieties on the market — a bolt-resistant, frost-tolerant variety that produces excellent yields of dark green endive leaves with white ribs even under challenging conditions. Heads are impressive: 22–24 inches wide and 12 inches tall with tightly curled dark green leaves. The slightly bitter, mild flavor is perfect in salads and excellent cooked. Plant in early fall for late-season harvests well after the first frost. 50–59 days.
Direct sow outdoors in early fall for late-season harvest, or in early spring 4–6 weeks before last frost. Sow seeds ¼ inch deep, 2–3 inches apart. Thin to 12 inches. Full sun to part shade. Keep soil consistently moist. Harvest outer leaves as needed or cut whole plant at soil level. Blanch heads by tying outer leaves over the center for 1–2 weeks to reduce bitterness.
