Ruby Red Swiss Chard (Beta vulgaris) is the classic red chard — brilliant red stems and reddish-green, crinkly leaves that are as beautiful in the garden as they are nutritious on the plate. High in vitamin A and a wide range of vitamins and minerals, Ruby Red is an excellent spinach substitute that delivers two entirely different vegetables from a single plant: cook the leaves using your favorite greens recipes, and prepare the thick, brilliant red stems separately as you would asparagus or braised celery. A productive, long-season crop that keeps delivering through spring, summer, and fall.
Direct sow outdoors 2–4 weeks before last frost in spring, or in late summer for fall harvest. Sow seeds 1 inch deep, 2–3 inches apart, in rows 18 inches apart. Thin to 6 inches. Full sun to part shade. Keep soil consistently moist. Harvest outer leaves continuously for extended production. Tolerates light frost.
