Grown almost everywhere in Italy for its amazing flavor, Romanesco (Brassica oleracea var. italica) is one of the most visually extraordinary vegetables in cultivation — and one of the best-tasting. Its apple-green heads are composed of perfectly spiraling logarithmic fractal florets that look like patterns from a kaleidoscope, whirling together in shades of chartreuse-green. Especially well adapted to cool northern areas, Romanesco does best in the fall season when cooler temperatures bring out better taste and texture than even the finest broccoli. Plants can easily grow 3 feet in diameter — give them lots of room. Nutty, mild flavor, more delicate than standard broccoli or cauliflower. Certified Organic. 75 days.

Important: Head shape can be affected by heat. Broccoli does not care for heat and will bolt prematurely — fall planting is strongly recommended for best results in most regions.

A Note on Growing Romanesco

Romanesco requires vernalization — a period of cold exposure — to produce heads in northern climates. Start seeds indoors under lights until true leaves appear, then harden off in a cold frame or low tunnel for 3–4 weeks at ~40°F. In warmer climates, fall planting naturally provides the required cold exposure. Avoid heat — high temperatures cause premature bolting and misshapen heads.

In the Kitchen

Serve raw florets on cheese boards and crudité platters — the fractal structure is a conversation piece. Roast with olive oil, garlic, and lemon until caramelized. Steam lightly and finish with brown butter and capers. Add to pasta with anchovy, garlic, and chili. Pickle florets in white wine vinegar for a stunning garnish.
