Red Acre, Heirloom Red Cabbage Seeds — Hardy Medium Maroon Heads, Sweet & Delicate Flavor, 85 Days | Zones 3–9

Red Acre (Brassica oleracea var. capitata) is a hardy heirloom red cabbage that grows well in climate zones 3–9. The plant produces medium-sized, maroon heads that liven up any dish with beautiful color and a sweet, delicate flavor. At around 85 days, heads reach approximately 7 inches in diameter and are ready to harvest. Needs full or partial sun and consistent moisture — 2 inches of water per week while growing. 500+ seeds per packet.

Why Grow Red Acre?

  • Hardy zones 3–9 — reliable performer across a wide range of climates
  • Beautiful medium maroon heads — ~7 inches diameter; adds striking color to any dish
  • Sweet and delicate flavor — excellent fresh, cooked, or pickled
  • Compact and productive — efficient use of garden space
  • Open-pollinated heirloom — save seed year after year

In the Kitchen

  • Coleslaw: Deep maroon color makes a vibrant, colorful slaw
  • Salads: Shred raw for color, crunch, and nutrition
  • Stir-fry: Add shredded leaves for color and crunch in the final minutes
  • Pickling: Quick-pickle with vinegar and sugar for a bright condiment
  • Cooking: Braise, roast, or add to soups and stews

Growing Notes

Red Acre needs full or partial sun and consistently moist soil — water 2 inches per week while growing. If sowing indoors and transplanting outside, harden off plants over the course of a week. Transplant ½ inch deep, with 1½ feet between plants in rows 2 feet apart. Seedlings do best in composted soil. At around 85 days, heads should be firm with a diameter of about 7 inches. When harvesting, remove the entire stem and root to prevent buildup of disease.
