Rainbow Carrot Mix was designed for the farmers market stand. A bunch of six-color carrots tied with twine is nearly impossible to walk past — the color contrast between deep purple, bright red, golden yellow, creamy white, and classic orange creates a visual display that sells itself. Harvest at similar sizes for the most uniform bunches. Succession sow every 2–3 weeks to maintain a continuous supply of market-ready bunches through the season.
The six varieties in this blend work great for juicing together. Each color contributes a distinct nutritional profile: Atomic Red’s lycopene, Tendersweet and St. Valery’s beta-carotene, Cosmic Purple’s anthocyanins, Lunar White’s mild sweetness, and Solar Yellow’s xanthophylls. Juiced together they produce a rich, complex, deeply nutritious carrot juice. Add ginger, apple, and lemon for a complete rainbow juice blend.
Direct sow ½ inch deep in sandy, moist, loose soil (pH 6.0–7.0) in full sun. Keep soil temperature between 55–75°F for best germination. Sow 1–2 inches apart in rows 18–24 inches apart; thin to 2 inches as true leaves establish. Keep soil consistently moist throughout growth. Avoid nitrogen-rich fertilizers. Succession sow every 2–3 weeks for a continuous harvest. Harvest at 65–75 days by pulling roots up from the soil by their tops. Watch for weevils and carrot rust fly — use floating row covers as a preventive measure.

It depends on the variety. Atomic Red’s color intensifies with cooking. Tendersweet and St. Valery hold their orange well. Cosmic Purple’s color fades with heat — use raw for maximum purple. Lunar White and Solar Yellow hold well through cooking.
