This Italian heirloom variety is the traditional variety used for sun-dried tomatoes. Short determinate plants yield big clusters of 1-2 oz. Red, plum-shaped, crack-resistant paste tomatoes and are a great substitute for Roma tomatoes. This tomato is prized for drying because it retains more flavor than most other drying varieties. It can also be stored well into the fall without drying. Traditionally pulled up roots and all and stored upside down for the winter. A great sauce tomato or eating fresh in salads or canning. Also prized for reconstituting in olive oil or crushing dried fruit into flakes to add to a sauce for quick thickening. Determinate. 75 DAYS.
