Pak Choi Extra Dwarf, Heirloom Baby Bok Choy Seeds — Smaller & More Compact Than Baby Pak Choi | 30 Days, Harvest at 2–3 Inches

Extra Dwarf Pak Choi (Brassica rapa Chinensis group) is a specialty pak choi variety smaller than standard baby pak choi — the most compact of the pak choi family. Fast-growing with curled, glossy, dark green leaves and short, thick white petioles. Harvest at just 2–3 inches tall for the most tender, delicate flavor. Use whole — steamed, stir-fried, boiled, braised, or added to soups. Can be grown year-round in sub-tropical areas. Heirloom, open-pollinated, non-GMO, cool-warm season annual. 30 days to maturity.

Why Grow Extra Dwarf Pak Choi?

  • Smaller than baby pak choi — the most compact pak choi variety; more delicate and tender than standard dwarf types
  • Harvest at 2–3 inches — use whole for beautiful presentation in soups, stir-fries, and steamed dishes
  • Fast 30-day crop — one of the quickest cool-season greens from seed to table
  • Curled glossy dark green leaves — short thick white petioles; striking appearance on the plate
  • Succession plant for continuous harvest — sow spring through fall; year-round in sub-tropical climates
  • Open-pollinated heirloom — save seed year after year

In the Kitchen

  • Whole steamed: Steam whole heads and dress with sesame oil and soy sauce — beautiful presentation
  • Stir-fry: Toss whole into a hot wok with garlic, ginger, and oyster sauce in the final minutes
  • Soups: Drop whole into miso soup, ramen, or nabe at the last moment
  • Braised: Braise in broth with ginger and soy sauce until just tender
  • Boiled: Blanch briefly and dress with sesame oil and chili

Growing Notes

Prepare fertile, well-drained soil. Sow seeds in spring after last frost through early summer, or late summer/early fall for fall harvest. Keep soil moist. Fertilize as needed. Optimum growing temperature is in the 60s°F. Exposure to frost or prolonged temperatures below 50°F may result in bolting. Mulch fall crops to avoid premature bolting.

Harvest: Harvest when plants are about 2–3 inches tall. Use whole for best presentation and flavor.
