NuMex Joe E. Parker (Capsicum annuum) is an improved version of the classic New Mexico pepper — an Anaheim-type heirloom with thicker flesh and slightly larger fruits than its relatives. Tall plants produce 8–10 inch cylindrical peppers with mild heat of 1,500–3,000 SHU, ideal for stuffing, roasting, canning, and chile rellenos. Popular in New Mexico for pepper wreaths and ornamental displays. Ripens to red. 75–85 days.
Start indoors 8–10 weeks before last frost. Transplant outdoors after frost danger has passed, spacing plants 18–24 inches apart in full sun. Water consistently. Harvest green for roasting or allow to ripen fully to red. 75–85 days from transplant.
