Midnight Red Amaranth, Heirloom Seeds — The Heat-Proof Midsummer Green When Everything Else Has Bolted

Midnight Red Amaranth (Amaranthus tricolor) is the green that saves the summer salad garden. When lettuce, spinach, and arugula have all bolted in the heat, Midnight Red Amaranth is just hitting its stride — dark, matte, burgundy-red leaves that are stunningly beautiful and genuinely delicious. The most tender and sweetest amaranth for edible greens, young leaves are a perfect spinach substitute: eat raw in salads, stir-fry, or steam. Nutritious and heat-resistant, it can also be incorporated into ornamental landscapes for dramatic color. Also delicious as microgreens, sprouting in just 3–4 days. Baby greens in 20 days, full maturity at 45 days.
