Spinacia oleracea — Matador Viking is a classic Italian heirloom spinach dating back to 1933 — still popular in Italy today and an excellent choice for any Italian recipe that calls for spinach. Large, smooth, dark green leaves with a mild, clean flavor. Slow-bolting for an extended harvest window. Direct sow in early spring or late summer for cool-season production.
