Matador Viking Spinach Seeds — 1933 Italian Heirloom | Large Dark-Green Smooth Leaves, Slow-Bolting, Microgreens-Ready

Spinacia oleracea — Matador Viking is a classic Italian heirloom spinach dating back to 1933 — still popular in Italy today and an excellent choice for any Italian recipe that calls for spinach. Large, smooth, dark green leaves with a mild, clean flavor. Slow-bolting for an extended harvest window. Direct sow in early spring or late summer for cool-season production. Also outstanding as microgreens. 45 days to maturity.

Why Grow Matador Viking?

  • 1933 Italian heirloom — a classic variety still widely grown in Italy; excellent in traditional Italian preparations
  • Large, smooth dark-green leaves — substantial, clean leaves ideal for cooking, canning, and freezing
  • Slow-bolting — extended harvest window compared to many spinach varieties; grows best in cooler temperatures
  • Microgreens-ready — outstanding as microgreens; use as garnish, in gourmet salads, or sprinkled on sandwiches
  • Versatile kitchen green — excellent for boiling, sautéing, canning, freezing, and raw in salads
  • Open-pollinated heirloom — save seed year after year

In the Kitchen

Sauté with garlic and olive oil for a classic Italian side. Add to pasta, risotto, frittatas, and soups. Blanch and squeeze dry for stuffed pasta fillings. Use raw in salads and grain bowls. Freeze blanched leaves for year-round use in cooked dishes.
