Beta vulgaris — Lucullus is one of the most productive and reliable heirloom Swiss chard varieties available — a remarkably prolific cut-and-come-again green with large, heavily savoyed dark green leaves and crisp, celery-like white stalks. Fine, mild flavor. Grows to 28 inches tall. Harvests from midsummer through late autumn, then re-emerges after a typical winter for an exceptionally early spring crop. Baby leaves ready in 30 days; full maturity at 55 days. An outstanding container variety.
Use baby leaves raw in salads. Sauté mature leaves with garlic and olive oil. Steam or stir-fry the stalks separately — they take longer to cook than the leaves. Braise whole leaves in broth. Add to soups, frittatas, and grain bowls. The mild flavor pairs with almost anything.
Direct sow outdoors from early spring through August. Sow ½ inch deep in fertile, moist, well-prepared soil in full sun or partial shade. Thin to 3 inches apart for baby leaves, 6 inches for standard harvest, 9 inches for full mature plants. Water consistently, especially during dry periods. Harvest regularly by taking a few outer leaves from each plant to promote continuous new growth.
