Grow a classic pickling dill with fragrant, feathery leaves and broad yellow flower heads. Long Island Mammoth brings fresh dill flavor to cucumber pickles, potato salads, fish, soups, cheeses, and omelets. Let some plants flower for pickling heads and mature seed, while harvesting foliage from younger sowings for everyday cooking.
Direct sow around the last frost date in full sun and loose, well-drained soil. Cover seed about ΒΌ inch deep and keep the seedbed evenly moist until seedlings establish. Germination usually takes about 10β14 days in suitable conditions. Thin to 12β18 inches apart, allowing extra room for flowering plants. Direct sowing avoids disturbing the developing taproot.
Sow small batches every 2β4 weeks while conditions are suitable to extend the supply of tender leaves. Flowering reduces leafy growth, so keep some plants for foliage and others for flower heads or seed. Fall sowing is an option where the remaining season allows plants to establish before severe cold. Water during dry spells and support tall flowering stems if exposed to wind.
Add fresh leaves near the end of cooking to enjoy their bright aroma. Use immature flower heads for classic dill-pickle flavor, and save fully mature seed for breads, soups, and spice blends. Plants may self-sow if seed falls, but a fresh sowing is the better way to plan the next crop.
